The Ancestral Method
If, like us for a long time, the ancestral method doesn't mean anything to you, have you heard the term PetNat (for petillant naturel; it means "naturally tingling") ? These methods are old, long-forgotten methods of sparkling wine production.
But from the beginning:
In addition to the mostly terrible frizzante, where carbonic acid is often simply artificially added to mediocre, unripe-tasting wines, there is the method used for champagne in particular in sparkling wine production: further sugar and yeast are added to fully fermented wine, which then ferments again in the bottle, whereby the Carbon dioxide is produced. No added sugar or yeast is used in Pet Nats and Ancestral wines. The (also ripe) harvested wine is bottled during fermentation and fermented there "wildly" and without any control for the winemaker. This fermentation naturally produces carbonic acid. Completely without additives. That is why this method is currently used by many natural winemakers, biodynamics and organic farms.
Ancestral De Puntiró is wonderfully refreshing, has only 12.5% alcohol and tastes much more like wine than the usual sparkling wines and is extremely stimulating to drink. Just great!
