Ribas Soma Blanc - Vino Blanco 2019

 This wine is a collaboration between Bodega Ribas and Sioneta Oliver, which is also part of the family. She is the owner of a vineyard planted with Viognier near the village of Consell. The idea for this was to get the best possible out of a grape variety that has great aromatic potential. The must fermented very slowly at low temperatures for more than 60 days. This procedure supports the expression and also the harmonious distribution of the aromatic substances.

 Later, part of the wine was stored in a new barrique, where it remained for six months, while the rest of the wine was matured in stainless steel tanks together with the fine yeast. The storage on the fine yeast - "sur lié" - causes an enrichment of the wine with mannoproteins and other metabolic products of the yeast, which give it more suppleness and fullness.
